Recipe: Italian Seasoned Roasted Vegetables
Ingredients:

  • 4 cups mixed vegetables (such as bell peppers, zucchini, cherry tomatoes, and red onion)
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, toss the mixed vegetables with olive oil, Italian seasoning, minced garlic, salt, and pepper until evenly coated.
3. Spread the vegetables in a single layer on a baking sheet.
4. Roast for 20–25 minutes, stirring halfway through, until veggies are tender and slightly caramelized.
5. Garnish with fresh parsley and serve as a delicious side dish or over pasta for a light meal.
