• Pat chicken dry (whole bird, pieces, or spatchcocked).
• Lightly oil the skin if desired, then generously season all over and under the skin where possible (about 1–1½ tablespoons per pound).
• Rest 20–30 minutes (or overnight in the fridge) before roasting.
• Roast at 400–425°F until the skin is golden and crispy and the internal temperature reaches 165°F in the thickest part.
• Also excellent on turkey, roasted vegetables, or potatoes.
• Tip: For extra-crispy skin, leave the seasoned chicken uncovered in the fridge for a few hours before cooking.
