Herbes de Provence is a traditional blend of aromatic herbs originating from the Provence region in southeastern France. Historically, local cooks gathered wild herbs like thyme, rosemary, savory, and oregano to season meats, vegetables, and stews. Though the blend wasn’t commercially defined until the 1970s, it reflects centuries of Provençal cooking rooted in simplicity and freshness.

 

This aromatic mix adds a fresh, earthy, and slightly floral note to a wide range of dishes. It’s perfect for seasoning roasted vegetables, grilled chicken or fish, hearty stews, and rustic breads. Just a sprinkle transforms everyday meals into dishes reminiscent of the sunny French countryside, bringing warmth and depth to your cooking.

 

Try stirring it into olive oil as a marinade, mixing it into butter for a flavorful spread, or adding it to tomato sauces for an extra burst of Provence charm.

 

Recipe: Roasted Herbs de Provence Chicken
Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp olive oil
  • 1 tbsp Herbes de Provence
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges (optional)
     

Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix olive oil, Herbes de Provence, minced garlic, salt, and pepper.
3. Rub the mixture all over the chicken thighs, making sure to get under the skin for extra flavor.
4. Place the chicken on a baking sheet or in a roasting pan.
5. Roast for 35–40 minutes, or until the skin is crispy and the chicken is cooked through.
6. Serve with lemon wedges and your favorite roasted veggies.
